Overflowing with sourdough discard and don’t feel like making something sweet? This is the perfect recipe and uses up THREE FULL CUPS of discard per pizza crust.
Truth be told, this sourdough discard pizza crust has been my “omg dinner is in an hour and I’m too tired to do anything” meal. The family loves it and it requires almost zero effort on my part.
I make two pizza’s at a time to feed everyone’s hungry bellies.
Measurements in the recipe are based upon using a 12″ cast iron pan OR a 9×13 rectangular baking dish. If you opt to use a baking dish, carefully place a piece of parchment paper in the bottom the dish after preheating to help with removal later.
Pizza Ideas for Toppings
Use whatever you have on hand to try out different creations! Some toppings we have used include:
- Leftover chicken cutlet and bacon with cheddar, ranch or BBQ sauce (add the ranch after baking)
- Traditional pizza sauce with mozzarella, sliced garlic, and basil
- Leftover sausage meat with peppers and onions or on top of a regular pizza
- Ricotta, sliced fresh garlic, and shredded mozzarella drizzled with more olive oil and herbs
- Leftover veggies like broccoli, onions, peppers, mushrooms, and tomatoes
Quick Sourdough Discard Pizza Crust Recipe
Ingredients
- 3 cups sourdough discard
- Salt, garlic powder, dried Italian herbs to season
- Toppings such as pizza sauce, cheese, veggies, leftover meats
- Olive oil
Instructions
Preheat oven to 425F and put your cast iron pan or baking dish in the oven for 10 minutes.
Carefully remove the pan or dish and drizzle the bottom with olive oil. If using a baking dish, carefully place a sheet of parchment paper in first.
Add 3 full cups of sourdough discard to the pan/dish. Spread the discard out from the center to the edges of the dish with a spoon.
Drizzle the discard with olive oil and season liberally with salt, garlic powder, and dried Italian herbs.
Place the pan or dish back in the oven for 10 minutes to bake.
Remove from the oven and add any desired toppings such as pizza sauce, cheese, chopped fresh vegetables, sliced fresh garlic, or leftover chopped meats.
Place the pizza back into the oven for an additional 5-7 minutes to finish.
Remove from the oven, slice, and enjoy!
