Easy baked oatmeal with mixed berries made in one bowl using fresh or frozen fruit. Perfect for a simple make-ahead breakfast that kids love and reheats well.

I have been making this baked oatmeal the same way for at least 6 or 7 years without any edits or changes.
It’s a simple, consistent, most-loved breakfast you can make from scratch and adapt to whatever fruit or ingredients you have on hand.
Depending on the season, you can use fresh or frozen berries, and it slices clean for easy portioning if you’re making this ahead of time for quick reheats.
Even better, you can mix it up the night before and bake it in the morning, or bake it right away. It works either way, and the result will be the same.

What Kind of Oats to Use
Rolled oats (aka “old-fashioned” oats)
Use these for this recipe. They hold their shape and bake up soft without falling apart.
Quick oats
Not recommended for this recipe, and are better for stovetop oatmeal or quick microwave bowls. They cook fast and get too soft, which is great for a quick breakfast, but doesn’t work for a longer bake like this.
Steel cut oats
Don’t use them here. They won’t cook through and will stay hard.
Steel-cut oats are less processed and take longer to cook. People use them for a heartier bowl of oatmeal that stays a little chewy. They need more liquid and more time, so they can’t be swapped for rolled oats in this recipe.

Making This for Another Family
This is a favorite of mine to bring to anyone in need due to illness, overbearing schedules, grief, or postpartum.
While I often think of bringing homemade chicken and dumplings, pasta fagioli soup, or Dutch Oven beef stew for assistance, this covers breakfast, which can easily be forgotten.
It also travels well, is kid-friendly, and reheats easily.
How To Make a Disposable Half Tray (9×13) Pan:
Double the recipe as written. This will give you the right thickness so it bakes evenly and still slices clean.
A single batch will be too thin, and a triple batch will be too thick and take forever to set in the center.
Recipe Adjustments:
If you’re bringing this somewhere right away, let it cool slightly so it holds together, then cover tightly with foil.
If you need to travel several hours, bake it the night before, let it cool, and wrap it very tightly with foil.
Transport in a cooler on ice. Guests can either reheat individual portions in the microwave or, if the oven is available, the whole tray can go in at 350°F until warm.
Bring a small container of milk to pour over when they reheat it to make everything feel a little more complete.
Tips for the Best Results
- If using frozen berries, don’t thaw; just add them straight from the freezer
- Bake a little longer with frozen fruit so it fully sets
- Let the oatmeal rest for 10 to 15 minutes before slicing, so it holds together
- Grease your dish well or line it with a foil sling if you want clean slices
- If your berries are very tart, toss them in a little sugar before baking
Freezing and Make-Ahead
You can fully bake this, let it cool, then slice and freeze.
Reheat straight from frozen or thaw overnight. It warms up well in the oven or microwave.
As stated before, you can also mix everything the night before, refrigerate it, and bake in the morning. Add about 10 extra minutes to the bake time if it’s cold from the fridge.

- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1/4 cup brown sugar
- 4 tablespoons unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract (how to make your own)
- 1 1/2 cups berries (fresh or frozen)
Instructions:
Preheat the oven to 350°F and grease or line a 9×9 baking dish or pie dish.
In a large bowl, mix the oats, baking powder, salt, and cinnamon.

In a separate bowl, add the milk, brown sugar, melted butter, eggs, and vanilla. Whisk everything together until combined.

Add the wet ingredients to the oat mixture, mix with a wooden spoon or stiff spatula until combined.
Fold in the berries. Pour into your prepared dish and spread it out evenly.

Bake for about 30 minutes if using fresh berries, or 45 minutes if using frozen. Remove from the oven when the center is set, and the top is lightly golden.
