Classic sloppy joes made from scratch in 30 minutes with ground beef, pantry staples, and a rich, balanced sauce that’s not overly sweet.

This is one of those dinners you make when you need something fast, filling, and guaranteed to get eaten without complaints.

It’s perfect for quick weeknights, tight grocery weeks, and even when you’re off-grid camping. It stretches well, reheats well, and most importantly, it tastes like real food – not sugar in a bun.

This recipe doesn’t use any sauce packets or canned cafeteria slop. Instead, you’ll use lean ground beef, a handful of pantry staples, and about 30 minutes of time.

Chop Your Onion SMALL

Especially if you have kids. For most of my meals, I run a coarsely chopped onion through my mini processor (or my bigger one if I already have it out).

Pulsing the onion into a fine chop makes it physically undetectable by picky eaters, and it melts right into the sauce. This chopper is truly my lifeline in the kitchen.

Don’t Overcook the Beef Early

If you brown it too much before adding the sauce, it will become dry and grainy. Add the sauce ingredients while at least half of the beef is still pink, and it will finish cooking in the sauce.

Let It Simmer Properly

The simmering process allows excess moisture to cook off. This is where it thickens and actually becomes sloppy joes instead of loose meat.

How to Make Classic Sloppy Joes

Equipment:

Ingredients:

  • 2 pounds lean ground beef
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1 tablespoon packed brown sugar
  • 1 1/2 cups crushed tomatoes
  • 3/4 cup ketchup
  • 1/4 cup water
  • 1/2 teaspoon hot sauce
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 hamburger buns

Instructions:

Pulse the onion through a food processor until very finely chopped, or chop by hand into very fine pieces.

Heat olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes.

Stir in the garlic powder and chili powder, and cook for about 30 seconds.

Add ground beef and break it up. Cook until half is browned, and half is still pink.

Add the brown sugar, crushed tomatoes, ketchup, water, hot sauce, and Worcestershire to the skillet.

Simmer about 10 minutes until thickened, stirring here and there. If desired, break up the beef further into small uniform pieces using a potato masher.

Season with salt and pepper.

Spoon onto buns and serve hot with potato chips to scoop up any meat that falls off.

Storage & Reheating:

  • Fridge: Store in an air-tight container for up to 4 days.
  • Freezer: Fill a freezer-storage bag with leftover meat 2/3 full. Place on a baking sheet and flatten the bag, removing any excess trapped air. Freeze flat and remove the baking sheet from the freezer. It will keep this way without losing any quality for 3 months.
  • Reheat: The best method is on the stove with a splash of water to loosen it back up. Avoid microwaving, if possible.

How to Scale This Recipe

For a crowd: Double or triple everything, make it in a larger pot, and keep it warm in a slow cooker.

For two people: Cut the recipe in half to use 1 lb of ground beef. You will end up with 2 large, very full sandwiches.

For a full family: As written, it comfortably feeds 6 modest portions.
