Simple poor man’s steak made with ground beef, Ritz crackers, and cream of mushroom soup baked into tender, sliceable steaks with thick gravy.

Some nights I have a plan for dinner. Last week, I completely dropped the ball.

My initial plan was to make homemade Salisbury steak, but 4 pm rolled around, and I had overlooked the fact that I ran out of onions…and milk.

I also had to leave by 4:30 for dance drop-offs and wasn’t going to be home to babysit the stove.

My shopping money was used up for the week, so going to the store was not an option, and we still had to eat dinner.

I didn’t have time to make homemade tortillas for tacos, I didn’t have sandwich buns or any type of bread for sloppy joes, and I didn’t have egg noodles for ground beef stroganoff.

When I looked through the pantry, I noticed that I had a few sleeves of crackers and several cans of various styles of condensed soup.

I used what was in the house and pulled together something that actually turned into a full, hot dinner that everyone enjoyed.

This is a meal for when life feels hard.

If you’ve got ground beef sitting in the fridge and nothing else to work with, this is what you should make for dinner tonight.

Ingredients You’ll Be Using:

Ground beef: The base for the “steaks”.

Ritz crackers: These stretch the meat and keep it soft instead of dense. Regular breadcrumbs won’t give you the same richness or texture.

Cold water: Replaces milk. It hydrates the crackers, so everything binds together.

Flour: Gives the meat a light crust and helps create the gravy later.

Salt + pepper: It’s simple, but all you really need.

Cream of mushroom soup: This is your gravy. Don’t dilute it with water; just spoon it over the steaks before baking.

Tips for Best Results

  • Freeze the meat just enough to slice, not solid
  • Keep the flour coating light
  • Don’t skip browning the steaks; that’s where the flavor comes from
  • Bake uncovered so the gravy thickens properly

How to Make Poor Man’s Steak for Dinner

Ingredients:

  • 2 lbs ground beef
  • 3/4 cup crushed Ritz crackers
  • 3/4 cup cold water
  • Flour
  • Salt + pepper
  • 1 can cream of mushroom soup (undiluted)

Instructions:

1. Mix the ground beef, crushed crackers, and cold water in a bowl

2. Press into a half-size baking dish and freeze for about 30 minutes

3. Slice into rectangular steak-sized pieces

4. Dredge in flour seasoned with salt and pepper

5. Brown both sides in a pre-heated pan with 2 tablespoons of butter or oil

6. Place browned meat into a 9×13 baking dish

7. Spoon cream of mushroom soup over the top of each steak.

8. Bake at 325°F for 90 minutes, uncovered. Let it rest for 10 minutes.

Serve poor man’s steak with whatever you have:

  • Roasted potatoes
  • Mashed potatoes
  • Buttered macaroni
  • Rice
  • Even just a piece of bread

If you’ve got something green in the freezer, throw it on the plate. If not, you still got dinner on the table.

Storage & Freezing:

This keeps well in the fridge for a few days. It also reheats easily in the oven or microwave.

If you want to make extra and freeze it for later, you can do that as well.
