Milk: Soaks into the crackers to keep the meatloaf tender.

Onion + garlic: I run the onion through my mini food processor and pulse until it is very fine. This makes it undetectable to picky eaters but still allows the flavor to come through.

How to Make Sheet Pan Ground Turkey Meatloaf

Ingredients:

  • 2 lbs ground turkey (93% lean)
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 2 eggs
  • 3/4 cup milk
  • 1 small onion, finely diced *
  • 3 cloves garlic, minced (or 1 1/2 tsp garlic powder)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 tablespoon olive oil

Ketchup Brown Sugar Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar, packed
  • 1 1/2 teaspoons Worcestershire sauce

Instructions:

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a large bowl, mix all of the meatloaf ingredients together until combined.

3. Transfer the mixture from the bowl to the sheet pan and shape into a thick loaf. It will be very soft. Gently press it into a thick, oblong loaf shape.

4. In a small bowl, whisk the glaze ingredients together. Spread the glaze gently over the meatloaf until it is covered on all exposed surfaces.

5. Bake for 70 minutes, or until the center reaches 165°F. Then turn the broiler on High for 3 minutes prior to removal.

6. Let rest for 10 minutes before slicing.

Freezing Instructions:

  • Freeze raw after shaping (skip the glaze until baking) or freeze cooked slices for quick dinners. Reheat covered with foil so it doesn’t dry out.
